The cheese things are actually hidden cheese wheels, there are a few of them in the game, some of them contain the message "Sod off" (seen at 9:31). They are intended for people breaking the boundaries of the game as a message to tell them to stop breaking the game is my theory. however, i have heard rumors that some cheese wheels contain messages that could be hidden lore.

There are three times I discovered where you appear with no hat no mods 1. The opening cutscene 2. During the spooky area boss fight 3. Kind of a glitch. When you start the manor level, the game tells you that hats are unavailable during the stage. If you try and swap hats to a different one, it deletes thevhat. Although, badges still appear? Take them off to get a hatless hat kid during queen vanessa's manor
